Panos is a chemist by training, with MSc in applied molecular spectroscopy and PhD in structure, dynamics and mechanical strength of polymers and particle-based nanocomposites. After his studies he joined the Soft Materials group at TU Eindhoven and was involved in the study of mechanics of individual soft particles using conventional and microfluidic techniques and its relation to their macroscopic viscoelastic properties (e.g. rheology). In 2013 he moved to Food Discovery Genesis Structurants group at Unilever R&D Vlaardingen and worked on techno-functional properties of proteins (mainly water insoluble) for the generation and evaluation of new technologies for the improvement and development of current and new food applications. Over the last 6 years he works as a researcher and project leader at Protein Technology group of Wageningen Food & Biobased Research with main focus on the techno-functional properties of vast variety of different proteins.
